Cranberry Coffee Cake

Ingredients & Measurements:
  • 3 cups fresh or frozen cranberries
  • 1 cup chopped walnuts
  • 2 cups sugar, divided
  • 3/4 cup butter softened
  • 3 eggs lightly beaten
  • 1 teaspoon vanilla
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon sugar
  • 1/2 teaspoon ground cinnamon
Instructions:
  1. in a greased 9 in sq pan combine cranberries, walnuts, and 1 cup sugar.
  2. In a mixing bowl cream butter and the remaining sugar
  3. add eggs and vanilla to bowl, mix well.
  4. sift together flour, baking powder and salt, add to bowl and mix well.
  5. drop batter by large spoonfulls over cranberry and sugar mixture
  6. carefully spread to cover evenly
  7. combine the last of the sugar with cinnamon and sprinkle over batter.
  8. Bake at 350 F for 50-60 minutes or until a tester comes out clean
