Cranberry Coffee Cake

Ingredients & Measurements:
- 3 cups fresh or frozen cranberries
- 1 cup chopped walnuts
- 2 cups sugar, divided
- 3/4 cup butter softened
- 3 eggs lightly beaten
- 1 teaspoon vanilla
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon sugar
- 1/2 teaspoon ground cinnamon
Instructions:
- in a greased 9 in sq pan combine cranberries, walnuts, and 1 cup sugar.
- In a mixing bowl cream butter and the remaining sugar
- add eggs and vanilla to bowl, mix well.
- sift together flour, baking powder and salt, add to bowl and mix well.
- drop batter by large spoonfulls over cranberry and sugar mixture
- carefully spread to cover evenly
- combine the last of the sugar with cinnamon and sprinkle over batter.
- Bake at 350 F for 50-60 minutes or until a tester comes out clean
