Swedish nut cake

Ingredients & Measurements:
  • 2 cups sugar
  • 2 cups flour
  • 2 eggs
  • 1/2 tsp baking soda
  • 20 oz crushed pineapple, canned
  • 1/2 cup chopped nuts
  • 1 cup brown sugar
  • 1/2 stick butter softened
  • 8 oz cream cheese softened
  • nuts for topping
Instructions:

Cake

  1. preheat oven to 350 F, grease 9x12 baking pan
  2. mix sugar, flour, eggs soda, pineapple (and juice) in a mixing bowl.
  3. add 1/2 cup nuts and pour into the prepared pan
  4. bake 40 minutes

Frosting

  1. mix brown sugar, butter, and cream cheese in a bowl.
  2. spread on cake while it's hot.
  3. sprinkle with nuts
Additional Notes:

Make sure the butter, cream cheese have plenty of time to soften or they'll be hard to stir and rip the cake. We use walnuts, almonds, and pecans for the nuts in this recipe.
