Italian Cream Cake

Ingredients & Measurements:
  • 1 stick butter
  • 1/2 cup shortening
  • 2 cups sugar
  • 5 egg yolks
  • 1 cup buttermilk
  • 5 beaten egg whites
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 1 cup shredded coconut
  • 1 cup chopped walnuts
  • 3/4 tsp salt
Instructions:
  1. cream butter and shortening
  2. add sugar and yolks
  3. combine flour soda and salt and add to shortening mixture
  4. add buttermilk and vanilla
  5. stir in coconut ans nuts
  6. fold in egg whites
  7. bake at 350 F until tester comes out cleanly.

Icing

  1. beat together 8 oz cream cheese, 1 stick butter, 1 box powdered sugar, and 1 tsp vanilla
Additional Notes:

the recipe calls for a 'box' of powdered sugar. We assume this to mean 1 lbs but we cannot be sure.
