Ginger Oatmeal Sorghum Cookies

  • 4 cups flour
  • 1 tbsp baking soda
  • 1 1/2 tsp salt
  • 4 cups quick cooking oats
  • 1 1/2 cups raisins
  • 1 1/4 cups sugar
  • 1 1/2 tsp ginger, more to taste
  • 1 cup butter melted
  • 1 cup sorghum molasses
  • 1 cup chopped walnuts or pecans
  • 2 tbsp hot water
  • 2 large eggs lightly beaten

topping

  • 1-2 tbsp water
  • 1/2 cup sugar
Instructions:
  1. sift together the flour, baking soda, and ginger into a large bowl
  2. add sugar and oats and mix well
  3. in a small bowl beat together the melted butter, molasses, eggs, hot water, and nuts.
  4. stir this into the bowl of dry ingredients until blended
  5. make the dough, which is sticky, into 2 inch balls and place 2 1/2 inches apart on a lightly greased baking sheet
  6. using water dampened fingers, lightly flatten each ball to 1/4 inch thickness
  7. brush the tops with water and sprinkle with sugar
  8. bake at 350 F for 15-20 min until lightly browned.
  9. cool on a rack.
Additional Notes:

if using dark baking sheets, reduce temperature by 25 degrees and increase time by 5 min.
