Ginger Oatmeal Sorghum Cookies

Ingredients & Measurements:

- 4 cups flour
- 1 tbsp baking soda
- 1 1/2 tsp salt
- 4 cups quick cooking oats
- 1 1/2 cups raisins
- 1 1/4 cups sugar
- 1 1/2 tsp ginger, more to taste
- 1 cup butter melted
- 1 cup sorghum molasses
- 1 cup chopped walnuts or pecans
- 2 tbsp hot water
- 2 large eggs lightly beaten

- 1-2 tbsp water
- 1/2 cup sugar
Instructions:
- sift together the flour, baking soda, and ginger into a large bowl
- add sugar and oats and mix well
- in a small bowl beat together the melted butter, molasses, eggs, hot water, and nuts.
- stir this into the bowl of dry ingredients until blended
- make the dough, which is sticky, into 2 inch balls and place 2 1/2 inches apart on a lightly greased baking sheet
- using water dampened fingers, lightly flatten each ball to 1/4 inch thickness
- brush the tops with water and sprinkle with sugar
- bake at 350 F for 15-20 min until lightly browned.
- cool on a rack.
Additional Notes:
if using dark baking sheets, reduce temperature by 25 degrees and increase time by 5 min.
