Oven "Fried" Salmon Cakes

Ingredients & Measurements:
  • 15 ounces canned salmon drained and flaked
  • 1 cup fresh bread crumbs
  • 1 egg or 2 egg whites lightly beaten
  • 1/4 cup minced scallions
  • 2 tbsp fresh lemon juice
  • 1 tsp worchestershire sauce
  • vegetable oil spray
Instructions:
  1. preheat oven to 400 F
  2. In a medium bowl, thoroughly combine all ingredients except the vegetable spray
  3. shape into 8 patties
  4. place patties on a cookie sheet that has been sprayed with the vegetable oil
  5. Bake for 5 minutes or until golden on both sides.
