Apple Dumpling Rolls

Ingredients & Measurements:
  • 3 1/2 cup tart apples, thinly sliced
  • 4 tbsp plus 3/4 cup sugar, divided
  • 1/2 cup water
  • 2 tbsp lemon juice
  • 1 tbsp butter, melted
  • 2 cups flour
  • 3 tsp baking powder
  • 1/4 tsp salt
  • 1/4 cup shortening
  • 1 egg, beaten
  • 1/2 cup milk
  • 1/2 cup brown sugar, packed
  • 1/4 tsp cinnamon

Optional Lemon sauce

  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1/4 tsp salt
  • 1/4 cup water and 3/4 cup water divided
  • zest of one lemon
  • 1/4 cup lemon juice
  • 2 tbsp butter
Instructions:

Apple Dumplings in Syrup

  1. combine apples, 2 tbsp sugar and water
  2. boil for 5 minutes.
  3. drain apples; reserve syrup
  4. Measure 3/4 cup syrup, adding water if necessary; pour this into 8x8 baking pan.
  5. Stir in 3/4 cup sugar lemon juice and butter.
  6. Preheat oven to 350 F. Place pan in preheating oven while you prepare the rolls.
  7. In large bowl, sift flour, 2 tbsp sugar, baking powder, and salt.
  8. Cut in shortening to resemble coarse meal. In a separate bowl, combine egg and milk 
  9. add to flour mixture; stir with a fork.
  10. transfer dough to to floured board; pat into 18x12 rectangle.
  11. cover dough with cooked apples
  12. sprinkle with brown sugar and cinnamon
  13. roll, jelly roll style, and cut into 2 inch slices.
  14. place slices, cut side down in syrup in 8x8 pan
  15. bake for 35 to 40 min or until lightly browned.
